Gold Standard Menu for Green Gown Awards

jess ladiesWe’ve just had the privilege of working with the team at The Environmental Association for Universities and Colleges (EAUC) to create a Gold Food for Life Catering Mark menu for a very special event. The Green Gown Awards recognise sustainability excellence in the tertiary education sector and were held this year at the Grade 1 listed Passenger Shed at Brunel’s Old Station.

All of our seasonal menus have already achieved Soil Association accreditation meaning that our ingredients are fresh, free from trans fats, harmful additives, GM, and are better for animal welfare.

Our menu for the Green Gown Awards was awarded the prestigious Gold Food for Life Catering Mark. To achieve the Gold accreditation we worked closely with our suppliers to source the very best organic ingredients for this special event. The benchmark was 15% organic produce and we’re proud to say that we nearly doubled this with a total organic spend of over 28%.

Starter
Kiln smoked Loch Duart salmon1 with Sharpham Park wholemeal spelt pancakes*,

greens, shoots and lime aioli
Jerusalem artichoke, lemon, tarragon and chervil on Sharpham Park wholemeal spelt pancakes*
with pickled root vegetables (v)

Main Course
Treacle cured grass fed beef tenderloin with beetroot fondant*, butternut puree*,
Anna potatoes*, spinach* and red wine jus
Aubergine tian, with sweet potato galette*, spinach*, pearl onions*, confit plum tomatoes
and roasted butternut squash* (v)

Dessert
Warm Fairtrade chocolate fondant with Jess’s Ladies organic cream* and hazelnut caramel

Clifton Coffee blend*, Fairtrade and Rainforest Alliance approved.
